1 ½ cups powdered sugar
1 cup butter, softened
1 tablespoon grated fresh ginger
1 egg
2 ½ cups white flour
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon cream of tartar
Crystallized ginger (optional)
- Mix powdered sugar, butter, fresh ginger and egg in a large bowl until well blended. Stir in flour, ground ginger, baking soda and cream of tartar. Cover and refrigerate 2 to 3 hours.
- Heat oven to 375°F. Divide dough into halves. Roll each half ¼ inch thick on lightly floured board. Cut into three inch Ginger Boys using a small Ginger Boy cookie cutter. Place a small piece of crystallized ginger in one hand (his spark plug). Bake on ungreased cookie sheet until edges are light brown, 8 to 10 minutes. Cool on a wire rack or cloth towel.
Icing
1 cup powdered sugar
A few drops of milk
Red and blue vegetable coloring
- In a small bowl, mix the sugar and milk until smooth, but not runny.
- Divide into two small bowls and mix in a drop or two of color to make pink and blue decorating icing. Use a pastry bag and a small writing tip to draw the non-profit heart, ITN for the business head, and a small lightening bolt in his hand for a spark plug if you do not have crystallized ginger.
